Common mistakes when using extra virgin olive oil in the kitchen

Extra virgin olive oil (EVOO) is the cornerstone of the Mediterranean diet. It is healthy, enhances the flavor of any dish, and is essentially fresh olive juice. However, in everyday cooking, many of us unknowingly make small mistakes that can compromise its properties, aroma, and taste.

To fully enjoy the qualities that define the oils certified by the Estepa Protected Designation of Origin (PDO), it is important to understand which practices should be avoided. Below, we explore the most common mistakes people make when using EVOO in the kitchen and how to prevent them.

1. Overheating the oil until it smokes

One of the most widespread myths is that EVOO is unsuitable for frying. In fact, extra virgin olive oil is one of the most stable fats for high-temperature cooking thanks to its high oleic acid content and natural antioxidants.

The mistake: Allowing the oil to become so hot that it starts to smoke.

The consequence: When oil begins to smoke, it has reached its smoke point. At this stage, many of its beneficial compounds break down, potentially producing harmful substances while also imparting a bitter, unpleasant flavor to food.

The solution: Always cook over moderate heat. For optimal frying, the ideal temperature range is between 160°C and 180°C (320°F–356°F). Estepa PDO oils perform exceptionally well within this range, helping to protect the food while creating a crisp outer layer that reduces excessive oil absorption.

2. Storing EVOO near heat or light

Extra virgin olive oil is a living product. While it does not expire in the strict sense, it continues to evolve over time and can deteriorate if not stored correctly.

The mistake: Keeping the bottle next to the stove, near the oven, or on a shelf exposed to direct sunlight.

The consequence: Heat and light accelerate oxidation, causing the oil to lose valuable polyphenols—its natural antioxidants—and develop rancid aromas and flavors.

The solution: Store your bottle or container in a cool, dry, and dark place, such as a pantry. At Estepa PDO, our oils are carefully packaged to preserve their distinctive characteristics, and proper storage at home ensures that this freshness reaches your table intact.

3. Reusing oil too many times (or incorrectly)

Thanks to its exceptional stability, EVOO can be reused more times than many other vegetable oils. However, it must be done correctly.

The mistake: Reusing frying oil repeatedly without filtering it, or mixing fresh oil with previously used oil.

The consequence: Burnt food particles accelerate the degradation of the oil. Mixing fresh oil with used oil only causes the new oil to deteriorate more quickly.

The solution: If you plan to reuse EVOO, always strain it through a fine sieve once it has cooled to remove impurities, and store it in an opaque container. As a general rule, it should not be reused more than three or four times.

4. Not choosing the right variety for each dish

Extra virgin olive oil is not a one-size-fits-all ingredient. Different olive varieties offer distinct flavor profiles that can either elevate or overpower a recipe.

The mistake: Using the same EVOO for everything, from delicate mayonnaise to rich, robust stews.

The consequence: An intensely flavored and bitter oil, such as an early-harvest Picual, can easily overpower the subtle taste of delicate white fish or baked desserts.

The solution: Learn to pair olive oils with different foods. For example, the Hojiblanca variety protected by the Estepa PDO is remarkably versatile, making it ideal for everything from fresh salads to meat and fish dishes. For lighter recipes or baking, Arbequina offers the characteristic fruity and sweet notes that complement rather than dominate the palate.

Respecting EVOO means enjoying it at its best

Extra virgin olive oil is much more than a cooking fat—it is a symbol of culture, health, and authentic flavor. Avoiding these common mistakes will not only improve the taste of your dishes but also allow you to benefit from the heart-healthy properties that nature provides.

At Estepa PDO, our farmers and olive mills work according to some of the world’s most demanding quality standards to produce truly exceptional extra virgin olive oils. Treating EVOO with the care it deserves in your kitchen is the final step in honoring that commitment. Your health—and your taste buds—will thank you for it.
