The oil isn&#8217;t spoiled in the way milk goes sour \u2014 but it has quietly aged past its best, and once that happens, no amount of careful cooking brings the flavor back. The good news is that keeping olive oil at its peak isn&#8217;t complicated. It just means understanding what the oil is actually afraid of, and giving it a home that avoids those things.<\/p><h2 dir=\"ltr\">The Four Things Olive Oil Doesn&#8217;t Like<\/h2><p dir=\"ltr\">Extra virgin olive oil is, in a very real sense, fruit juice \u2014 the freshly pressed juice of olives, unfiltered of its natural character. Like any fresh juice, it changes over time, and four factors accelerate that change: light, heat, air, and time itself.<\/p><ul><li dir=\"ltr\"><strong>Light<\/strong> is the fastest way to age an oil prematurely. Ultraviolet rays trigger oxidation, breaking down the very polyphenols and aromatic compounds that make a good EVOO taste the way it does. This is why quality producers bottle in dark green or amber glass, or in tins, rather than clear glass \u2014 and why a bottle left on a sunny countertop will lose character within weeks, however beautiful it looks catching the light.<\/li><li dir=\"ltr\"><strong>Heat<\/strong> works in a similar way, just more slowly. An oil stored near the stove, the oven, or a sunny window will break down faster than one kept in a cool cupboard.
